Poppy Seeds and Lemon Clafoutis

Ingredients:

1 Keto Baker London Poppy Seed Mug Cake Mix

2 tablespoons of butter or coconut oil, melted

80 ml unsweetened almond milk

60 ml full fat coconut milk

Freshly grated lemon zest

60 g cherries, blackberries, raspberries or other berries of choice

Method:

  1. Preheat the oven to 180°C.
  2. In a bowl, combine butter with Keto Baker London Poppy Seed Mug Cake Mix.
  3. Add almond milk, coconut milk and lemon zest.
  4. Grease 2 ramekins or small pie plates with butter.
  5. Divide the mixture between the plates and top with desired fruits.
  6. Bake covered with a piece of parchment paper for 20 minutes. Remove the paper and bake for another 5-7 minutes.
  7. Serve warm with whipped cream.
