Vegan Burgers in Mixed Seeds Buns (you’ll need a Pizza Mug Bread Mix, as well)

Bake the Keto Baker London Mixed Seeds baking mix as advised on the pack. Make 6 buns of equal size and shape.

For the patties:

  1. Roughly chop mushrooms, cauliflower and onion in a food processor and set aside.
  2. Heat a frying pan with a little oil. Stir fry the mushrooms, onions and cauliflower mix in the pan for 5 minutes.
  3. Add chilli flakes and season with salt and pepper, if you wish. Let cook for another 3 minutes.
  4. Stir in a Pizza Mug Bread Mix and cook for 1-2 minutes. Let the mixture cool down.
  5. Preheat the oven to 180C fan-assisted. Line a tray with greaseproof paper.
  6. Shape the mixture into burger patties and place on a baking sheet.
  7. Bake the patties in the oven for 8 minutes, flip them over after the first 4 minutes.

In a bowl, mash ripe avocado with lime juice, salt and pepper. Add parsley (if you wish) and mix well.

Cut the (already cooled-down) Keto Baker London Mixed Seeds buns in half and toast each half.

Spread the bottom half of the bun with a layer of avocado puree (feel free to add lettuce or other salads to it), followed by a burger patty, dash of hot sauce, vegan cheese and / or mayo and then add the top half of the bun.
